What better way to celebrate than with pizza, and even better, mini pizzas that you and your guests can assemble yourselves and watch them bake in a traditional style mini fired oven!

This tabletop pizza oven is super cute and would make an amazing gift for a foodie. It is best suited to outdoor use in my opinion as although safe for indoor use, the fuel smell did linger for a couple of days and was rather smoky during use. Also, have some nibbles around a table for while the pizzas cook as they take a good 10-15 minutes for 2 and you don’t want your guests hungry and watching the clock as they cook! Or even better, get a few ovens to have on the go at the same time. Overall, this is a novel and fun gift that is sure to make people smile and excited.

A different approach would be to cook the pizzas yourself first then serve them on a platter like this beautiful two tier slate stand. Perfect for a casual indoor event that is low maintenance and this is definitely making an appearance at my wedding next year!

To make things easier, I always use a yeast free dough that can be used immediately after making rather than waiting for dough to prove, but of course you can use your favourite dough and toppings to make your mini pizzas just how you like them.

I love to use my super fast and easy 10 minute cheddar to top pizzas plus a creamy almond mozzarella style based on this recipe but using almonds and cornstarch which makes for a softer, creamier cheese plus a heaped tbsp nutritional yeast but the classic is equally great for a more gooey version.

Makes approx. 12 mini pizzas (or 2 large)

Pizza dough – lightened up from my original yeast free dough

  • 2 1/2 cups plain flour
  • 1 tbsp baking powder
  • 1 tsp sea salt
  • 1 tbsp olive oil
  • 2/3 cup unsweetened soya milk

Blitz the flour, baking powder and salt together in a food processor and then add the oil and the gradually drizzle the milk through the feed tube whilst pulsing until you have a soft, not sticky, dough ball. You make not need all the milk. If the dough is dry, add water a teaspoon a a time of flour if the dough is too wet.

Pizza sauce

  • 1.5 cups passata
  • 1 tsp dried oregano
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper

Stir ingredients together in a pan over a low heat until fragrant.

Toppings

  • vegetables – tomatoes, mushrooms, peppers, onions, garlic, olives etc.
  • Baked tofu, vegan sausage, seitan bacon, tempeh etc
  • vegan cheese (see links above)

Method:

Take a ball of dough and press it on the mini dough pan, or roll out if not using the mini oven. Top with pizza sauce, desired toppings and bake until golden, about 10-15 minutes in the mini pizza oven or a 200’C/400’F oven.
