Chai Pear Cake


It’s been an exciting week for me as I began volunteering for a wildlife hospital on Monday. I have learnt so much already and just feel like I belong. The hospital is mainly treating birds and hedgehogs at the moment, plus the odd bunny and badger. It is such a wonderful feeling to know these wild animals are offered another chance and are truly given the best care possible.


It is by chance that the hospital is owned and run by vegans. I did not know this when I applied for a position. It was only when I heard one of the lovely nurses ask for soya milk in her tea that I excitedly asked if that was due to lactose intolerance or veganism. Why does this matter? Well it matters simply because for the past few years of being vegan, I have felt quite alienated. Apart from you, my wonderful readers, many of which are vegans, I have never met a vegan in real life before.


When I started my degree course in Animal Management last year, I naively assumed there would be many vegetarians and vegans on my course. Turns out I was the only one. I guess it’s just nice to be around people sometimes who you have such an important thing in common with – after all, vegetarianism has always been, since a small child, the basis of who I am.


So, I have met a real life vegan and today a lovely vegetarian and I’m sure there is more but I try not to walk up to people and greet them with the question. It’s hard in my excitement of finally meeting like-minded people!

Besides the vegetarian factor, it’s just lovely to meet people who want to care for even the smallest mouse, vegetarian or not!


So, now on to cake! At this time of year when I visit my dad, it’s all about pears. I come away with bags full from his abundantly lined garden of wild, organic pears. Often so many that they sit on the side as I ponder what I can possibly do with them in the time I have! They always go to good use in the end, and this is an illustration of that.


This cake is delicious still warm, with a large mug of hot tea. Perfect to warm you up after a chilly Autumn day. The subtle chai spices make it even more warming, brightened by the citrus.

Ingredients: Serves 12

  • 245g.1 3/4 cup plain flour
  • 200g/1 cup unrefined sugar or equivalent granulated stevia
  • 1 tsp bicarbonate of soda
  • 3 pears, diced, no need to peel
  • Zest and juice of 1 orange and 3 limes
  • 1 chai tea bag
  • 2 Tbs apple cider vinegar
  • 85ml/1/3 cup rapeseed oil


  1. Preheat the oven to 180ºC/350ºF and line the base of a 9 inch round tin.
  2. Grate the zest of the citrus into a large bowl and set aside. Add the juice of the citrus to a measuring jug and top up with boiling water to reach 250 ml/1 cup and add the tea bag, set aside to steep.
  3. In the bowl of zest, whisk together the flour, sugar and bicarbonate of soda. When combined, stir through the pear.
  4. Remove the tea bag from the jug and stir in the vinegar and oil, then add to the dry ingredients and mix until just combined.
  5. Pour the batter into the tin and bake for about an hour, or until a skewer comes out clean. Dust with a little sugar before serving, slightly warm.

  5. Yay for you for volunteering! My sister works at an animal shelter and neither she nor her fellow employees are vegan. I’ll never understand why animal caretakers don’t get the connection but I still hold out hope and bombard my sis with vegan recipes all the time. 🙂

        Hi, Poppy. I finally tried your recipe for chai pear cake today. My cake didn’t turn out as good as yours looks, i.e. the cake didn’t quite rise, but it did taste good. Perhaps to do with the measuring cups as I use approximations. Thanks for the recipe. I will be trying out again sometime.

    Wow, never met a vegan? I’m so impressed you made that commitment without meeting people who had done it already! That was the biggest thing that gave me the courage. There’s a vegan girl in my writing group and at least three vegans in my running club – perhaps my city just attracts vegan?! Come and visit and I’ll introduce you 😉 This cake looks fabulous by the way, I might have to get out the mixing bowls.

      Wow, how interesting! What city do you live in?
      I’ve been vegetarian since I was 6, so transitioning to a vegan diet wasn’t that unknown to me, I was mostly influenced by Viva! and other resources which taught me about egg and dairy farm practices amongst other things.
      I definitely think you should get out the mixing bowls 😉

        I’m in Birmingham. There are a couple of decent vegan/veggie restaurants but it’s not an especially vegan place. I’ve been vegetarian for my entire life but being vegan only really seemed inevitable once I’d met and talked to some vegans about the same practices you came across through Viva! 🙂 And perhaps cake times will happen tomorrow, nom nom nom.

        Oh that’s cool, I’ve been to the o2 a couple times but never really experienced the city! Before turning vegan I would only eat organic, high welfare dairy so often ate vegan already if that wasn’t available so that probably helped my journey! It’s great that you have vegans around you 😀

  18. Wow, I didn’t know that you were the only “vegan” in your courses for Animal Management, I guess it’s nice to share the same values with non-vegans. The Chai Pear cake looks so delicious, I would love to drizzle some frosting on it!

      Yes, looking back I was really naive, people wanting to study animals doesn’t always equate to compassion! We studied farming practices and slaughter etc last year, many of my classmates are interested in farming, pet trade etc. Theres money to be made in animals after all. Sadly.

      Frosting would be good, I liked it plain as a cake to have with tea! 😀

  20. It’s fabulous that you’re doing this volunteer work- it sounds so exciting! And meeting like-minded people is a bonus- it’s so important to have a vegan community. When I first went vegan I started attending meetups for AR and vegan eats, I met so many people who are my friends now. They’re out there! Also, it seems strange that those who love (certain) animals don’t think about the ones they eat, but that’s what carnism is founded on. Loving one and eating the other. Have you read Melanie Joy’s book? You’d love it! oh and of course the cake sounds and looks lovely.

      Thank you Kelli. Yes I agree, I find it strange when we deliver lambs and stuff and students are all swooning over the babies then go and eat the college lamb on the cafeteria menu. So weird. :/
