Sprouted Seed and Radish Sandwich

This was no ordinary sandwich. A sandwich to remember.

Crunchy, nutrient dense sprouted seeds, crisp lettuce, cool cucumber, peppery radish and sweet tomato encased in a creamy peppered mayonnaise between two slices of bread.

Take 2 slices of your bread of choice (for me today it was a fresh sliced white bakery loaf) and spread with 10g (2 tsp) vegan butter or margarine. Slather one of the slices with 10g (about a tbsp) of your favourite egg free mayonnaise or other dressing or spread and grind over some black pepper.

Pile on 20g (a handful) of mixed sprouted seeds, lettuce leaves, cucumber slices, a thinly sliced radish and slices of a tomato. Top with second slice of bread and devour.

  9. Looks like a super sandwich! I was just thinking that I need to start using the fresh bread from our bread machine for more than just toast (although this toast tastes pretty dang good right now :P)
